INGREDIENTS FOR EGG TACOS

  • Eggs – 6
  • Light cooking cream – ½ cup
  • Olive oil – 1tbsp
  • Red onion (finely diced) – 1 (small)
  • Green capsicum (finely diced) – ¼ cup
  • Tomatoes (deseeded and diced) – 2 (small)
  • Mini stand ‘n’ stuff taco shells – 8
  • Avocado (finely diced) – 1
  • Light sour cream – ¼ cup
  • Cheese (grated) – ¼ cup
  • White pepper powder – 1 tsp

HOW TO COOK EGG TACOS

Break eggs into a bowl. Add cream, salt and white pepper. Mix well and set aside.

Heat oil in a non-stick pan and add onion and capsicum. Cook well until softened.

Now add the egg mixture and cook for 2 mins or until beginning to set. Mix well once again at this point.

Meanwhile, heat the taco shells as per the directions in the packet.

Now arrange the heated taco shells onto the plate, spoon in the filling of cooked egg
