  • One small ginger: finely grated 
  • 2 garlic cloves: crushed
  • 1 tsp sugar
  • A pinch of mustard seeds 
  • 2 tbsp of coconut oil or vegetable oil
  • 250ml coconut milk
  • 2 cups of lukewarm water
  • 3-4 dried red chillies
  • 3 limes: juice and zest kept aside 
  • 1medium sized tomato: diced 
  • Some curry leaves

  • 100gms of mint and coriander leaves: finely chopped

  1. Grind the ginger, salt and sugar into a smooth paste.
  2. In a pressure cooker, put oil and temper it with mustard seeds, curry leaves and dried red chillies. 
  3. Add the ginger, salt and sugar paste and cook it for a minute. 
  4. Add in the tomatoes.
  5. Now put the uncooked rice and stir for a while. 
  6. Now add in coconut milk, lime zest and juice 
  7. Stir well and add lukewarm water 
  8. Pressure cook it upto 2 whistles
  9. When the rice is cooked. Check the seasoning and add the chopped mint and coriander leaves 
  10. Stor well
  11. Put the flame off
  12. Garnish it with roasted peanuts
  13. Serve it fresh and warm with sides of your choice.
